Easy Dark Chocolate Chip Protein Power Balls

Okay okay, I couldn’t possibly keep this delicious recipe to myself much longer. These little power balls are absolutely scrumptious and irresistible. Did I mention that you can make them in less than 10 mins?! Well, you can! Want to know the best part? NO baking necessary!! Not only are they quick to make, but i’m willing to bet that you have 80% of the ingredients in your pantry RIGHT now.

My obsession with these little treats started when I began breastfeeding my son Theo who is currently a month young. Breastfeeding has been extremely easy and natural for us but I will always look for ways to improve and make the best and most nutritious milk for my little babe. With that being said, eating healthy and nutritious meals/ snacks in between (and sometimes during) feedings every two hours and having a 4 year old is difficult. With such little time and passion to continue my healthy lifestyle, I immediately went on the hunt to find QUICK, easy, healthy and filling snacks that would be easy to eat with a baby attached to me.

When I find a recipe I like, I usually try to tweak it a bit and make it my own but I barely had to tweak this one because it was delicious on its own (recipe inspired by the great Maegan at thebakermama.com). Even if you’re not breastfeeding, these power balls are always a great pick me up.

Why are these perfect for breastfeeding moms? You can help build your milk supply and energy levels- don’t we all want more energy? Women that are breastfeeding are recommended a bowl of oatmeal DAILY and 65- 71 grams of protein. Read more information on each ingredient below.

Benefits of each ingredient:

Oats are loaded with the following Vitamins and Minerals: Manganese,Phosphorus, Magnesium, Copper, Iron, Zinc, Folate, Vitamin B1, Vitamin B5.

Peanut Butter: Healthy fats, Protein, Fiber, Vitamin E, Magnesium, Potassium and Vitamin B6

Flaxseeds: Omega-3, FiberProtein, Vitamin B1Manganese, MagnesiumPhosphorusSelenium, Vitamin B6, Iron, Potassium, Copper and Zinc.

Honey: Antioxidants, Energy 

Brewers Yeast: B vitamins, chromium, and protein.

INGREDIENTS:

  • 2 cups Old- FashionedRolled Oats
  • 1/2 cup Dark Chocolate Chips
  • 1/2 cup Ground Flaxseeds
  • 1/2 cup Honey
  • 1 cup Peanut Butter (I use creamy no stir PB just to make it easier to combine ingredients)
  • Coconut Oil (OPT, use on hands to avoid from mix sticking to hands)
  • 1 tsp Madagascar Vanilla Bean Extract (Really any type works)
  • 2 tbsp Brewers Yeast

INSTRUCTIONS:

Add in dry ingredients to a medium or large bowl, stir. Slowly mix in wet ingredients and mix with hands until well combined. Once combined, use TBSP measurer to make nice even balls. Roll together and refrigerate for 5- 10mins. Enjoy!

UPDATE: Here is a tip that I tried with my last batch which made the whole process SO much easier (if you don’t have a mixer like myself). Melt 1 TBSP of coconut oil into the Peanut Butter and whip together with a fork. This makes the Peanut Butter a bit fluffy and so much easier to fold all of the ingredients together. Try it!
