Healthy Pasta Dinner

Avocado creamy sauce: add 1 avocado, 1/2 c spinach, 1 tsp minced garlic, sea salt (to your tasting), 1 tsp slivered almonds, ground pepper and a drizzle of olive oil all inside your blender and blend until smooth. Plop on top of your fave pasta and voila! I recommend using pasta that looks fun and enjoyable (especially if you’ve got kiddos, go for the spiral p
asta). In this dinner, I used whole wheat organic elbow pasta.

Toppings: Cherry tomatoes and cucumber added a nice vibrant color to the meal but also a flavor. The cherry tomatoes made it taste as if their were salsa in the pasta and the cucumbers added a nice crunch!
